Quinoa and vegetable stir-fry

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup frozen peas
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes

Directions:

  1. Rinse quinoa thoroughly in a fine mesh strainer. In a medium saucepan, bring quinoa and water to a boil. Reduce heat to low, cover, and simmer until tender and most of the liquid has been absorbed, about 15-20 minutes.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 3-5 minutes.
  3. Add bell pepper, zucchini, and peas to the skillet and cook until tender, about 5-7 minutes.
  4. Stir in cooked quinoa, soy sauce, sesame oil, and red pepper flakes. Cook for an additional 2-3 minutes, stirring occasionally.
  5. Serve hot and enjoy!

Roasted sweet potato and black bean tacos

Ingredients:

  • 2 sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 can black beans, drained and rinsed
  • 8 corn tortillas
  • Toppings of choice: avocado, salsa, Greek yogurt, cilantro, etc.

Directions:

  1. Preheat oven to 400°F. Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, stirring occasionally, until tender and lightly browned.
  2. Meanwhile, heat black beans on the stove or in the microwave until heated through.
  3. Warm corn tortillas in the oven or on the stove.
  4. Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, and desired toppings.
  5. Serve hot and enjoy!
